Pumpkin Pie Dip (A 5 Minute Recipe)


Some of you may be thinking, what is with this girl? Does she only eat pumpkin? I know I've posted a lot of pumpkin recipes lately, but it's just that time of year =). Also the other reason, I always buy the huge can of pumpkin puree because I can get it for the price of what the small can costs. So why would I buy the small can? It just wouldn't make sense. I hate wasting though, so I buy the large can and then I can get two, sometimes even three different pumpkin recipes out of it (unless of course I'm making pumpkin pie). 
I saw this Pumpkin Pie Dip floating around Pinterest so I thought, ooh yes I must try that! I liked that this recipe didn't use cool whip as some of the pumpkin pie dips do. I changed a few things from the original recipe. I thought it needed a little more pumpkin flavor so I added an additional 1/4 cup pumpkin puree (to the 1 cup listed).  I omitted the pumpkin pie spice and rather just increased the cinnamon, added nutmeg and cloves then left the ginger as listed, then I added a little caramel sauce of course. I love pumpkin and caramel. I love anything with caramel. 
This simple 5 minute dip is has just the right amount of sweet and spice, it's fluffy, creamy and yes even dreamy. Basically it's pure goodness. It tastes so much like pumpkin pie (different texture obviously, but same amazing flavor). So when you want a quick dessert with all the flavors of pumpkin pie that everyone will love, then this is definitely what you'll want to make. You'll quickly lose track of just how much you've actually eaten. Enjoy and Happy Fall!




Pumpkin Pie Dip
Yields about 4 cups

Ingredients:
8 oz cream cheese, softened
2 cups powdered sugar
1 1/4 cups canned pumpkin
1/2 cup sour cream
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp cloves (optional)
1/4 - 1/2 cup caramel sauce, store bought or homemade (optional, but highly recommended)
graham crackers, chocolate crackers or gingersnap cookies for servings

Directions:
In a large mixing bowl, using an electric hand mixer on low speed, blend together cream cheese and powdered sugar until combine, then increase mixer to medium and beat for 1 minute until smooth and fluffy. Add in pumpkin, sour cream, cinnamon, nutmeg, ginger and cloves and mix until well blended and fluffy, about 1 - 2 minutes. Drizzle with optional caramel sauce (and marble if desired), serve with crackers. Store in refrigerator in an airtight container.

Tip: for cleaner edges on your graham crackers, simply cut them along indentations with a sharp knife rather than breaking them into individual pieces.

Irresistible White Chocolate Lemon Popcorn


Someone please take this popcorn from me, I can't resist it =)! How I love specialty popcorn. This is definitely one of my new favorites. It taste like lemon cream pie, in sweet, crunchy, popcorn form. Basically, it's literally irresistible.
The method of preparing this popcorn recipe may seem a bit odd. That is due to the way the oils and acidity of the lemon juice and zest react with the white candy melts. I made four different batches, knowing ahead of time what I was getting into. I thought the lemon juice probably would cause the white candy melts to seize up after melting and they did. I wasn't sure if the lemon zest would do it too, but it did. So, I found the best method was as listed. I coated the popcorn in the plain white candy melts without mixing the lemon juice and zest into the candy melts. Then while the coating over the popcorn was still moist I added the lemon zest so it would stick well, then I let the coating dry a bit before adding the juice so it would kind of create a shell over the popcorn so the lemon juice wouldn't make it soggy and stale, and just be absorbed into a few pieces of popcorn. Then lastly, I baked it to create a perfect crunch, and again to get rid of the of any stale-like popcorn. 
The entire family loved this popcorn! I'm definitely going to be trying it in a lime version too. Enjoy!
Oh and I thought I better mention, I took these photos just before baking the popcorn (because I didn't decide to bake it until after taking the pictures) so the finished product should look a bit more golden.




White Chocolate Lemon Popcorn

Ingredients:
1/2 cup unpopped popcorn kernals
12 oz. white candy melts (such as Wilton)
2 1/2 Tbsp lemon zest
2 Tbsp fresh lemon juice

Directions:
Pop popcorn in a popcorn popper, according to manufacturer's directions, into a very large bowl. Melt white candy melts in a microwave safe bowl, on 50% power, in 30 second intervals, stirring after each interval until melted and smooth. Pour melted white candy melts over popcorn and toss with a rubber spatula until evenly coated. Sprinkle lemon zest over popcorn and toss until evenly distributed. 
Preheat oven to 275 degrees. Allow coated popcorn to dry at room temperature, about 10-15 minutes, then drizzle lemon juice over popcorn and toss well to evenly coat. Spread popcorn onto a rimmed cookie sheet and bake in preheated oven for 15 - 20 minutes until lightly golden. Allow popcorn to cool completely, store in an airtight container or large ziploc bag (note: this is best enjoyed the day it's made or one day following).

Auntie Anne's Pretzel's Copycat Recipe


Mall pretzels that you can now enjoy in the comfort of your home for a fraction of the price with countless dipping sauce options, yes please! I found this recipe over at one of my favorite food blogs, Yammie's Noshery. It's such a great blog to follow, so if you're not yet following I suggest you do it now =). She takes amazing photos, creates many of her own recipes and she has great taste in food. This recipe she posted is one example of her great taste in food. I mean, who doesn't love a fresh, warm Auntie Anne's pretzel? And with Yammie's homemade garlic cheese sauce you've got a match made in heaven. Save a few for dessert and you can try them with a warm glaze, caramel or chocolate sauce for dunking. How ever you dunk them I recommend you eat them warm, they just aren't the same cool. This Auntie Anne's Pretzels copycat recipe is one you are going to want to try. You get a chewy yet fluffy, perfectly tender, beautifully golden brown pretzel that will have you savoring every last flavorful, salty little bite. Enjoy!



Auntie Anne's Pretzel's Copycat Recipe
Yields 12 pretzels

Ingredients:
2 cups milk (I used 2%)
1 1/2 Tbsp active dry yeast (2 packets)
6 Tbsp packed light-brown sugar
4 Tbsp butter, at room temperature
4 1/2 cups all-purpose flour, plus an up to an additional 1/2 cup as needed
2 tsp fine salt

1/3 cup baking soda
2 cups warm water
coarse salt, to taste
6 Tbsp butter, melted

Dipping sauce for serving, optional*

Directions:
Warm milk in a microwave safe bowl in microwave (or alternately over stove top in a small saucepan) until temperature of milk reaches 110 degrees, about 1 1/2 - 2 minutes on HIGH power. Pour milk along with yeast into the bowl of an electric stand mixer and whisk together until yeast has dissolved, let rest 5 minutes. Add brown sugar, 4 tbsp softened butter, 1 cup flour and 2 tsp fine sea salt to milk mixture and using the whisk attachment, stir until blended. Switch attachment to a dough hook, add remaining 3 1/2 cups flour and kneaded mixture on medium low speed until elastic. Mix in up to an additional 1/2 cup flour, as needed, until dough pulls away from the sides of the bowl. Cover bowl with plastic wrap and allow dough to rise in warm place until doubled in size, about 1 hour.
Preheat oven to 450 degrees. Line two baking sheets with Silpats or parchment paper (alternately you could grease them). Punch dough down several times to release any air pockets. Divide dough into 12 equal pieces (the easiest way to do this is to divide the dough in half, then divide the halves into halves then those and into thirds). Cover divided dough loosely with plastic wrap (just to prevent a dry crust from forming on the outside) and roll each piece out into a long, thin rope about 32 - 36 inches long (I found working on a non-floured to very very lightly floured surface worked best, I began with a lightly floured surface and realized it was much harder to get more stretch, plus it was much faster to roll them out when working on a less-no flour surface). Form dough rope into a pretzel shape. 
In a shallow bowl, whisk together baking soda and warm water then fully immerse pretzel into water mixture and allow excess water to drip off (I ended up shaping most of them into the pretzel shape once placing on the cookie sheet rather then doing it twice, I would just fold the rope into halves several times then immerse in water mixture then shape them on cookie sheet). Place on prepared baking sheet, reshape as needed and sprinkle to taste with coarse salt. Repeat this process with remaining dough. Bake pretzels in preheated oven 7 - 11 minutes until golden brown (note that you will likely only be able to cook 6 at a time among the two baking sheets) Remove from oven and brush top and bottom of pretzels with melted butter. Serve warm with optional dipping sauce. Reheat in microwave or in a warm oven once they've cooled, if desired.

*Dipping sauces I would recommend are Yammie's amazing garlic cheese sauce (click here for the recipe), marinara sauce, or honey mustard. For a sweeter option, try with a warm homemade doughnut glaze, caramel sauce or chocolate sauce. Alternately if you want another dessert option, skip the coarse salt step of the recipe and sprinkle instead with lots of cinnamon sugar.

Two Ingredient Fruit Dip (A 60 Second Recipe)


How can such an incredibly simple recipe be so fantastically good? I absolutely love this fruit dip! I got the recipe from my sister whom got it from her mother in law whom got if from I don't know where. Basically what I'm saying is this recipe is not my creation, so if you know who came up with it please let me know because I would love to credit them. They seriously came up with something genius. This recipe literally can be made, ready for dipping in 60 seconds. It doesn't get much easier than that. It's creamy, fluffy, sweet and oh so delicious. It will have you doing the finger swipe to any remaining streaks straggling behind in the bowl. If there's any left the next day (which is very very rare) I always want to eat it for breakfast, well it is served with fruit after all so that's healthy right =)? Enjoy! Oh and if anyone tries this with honey or blueberry cream cheese please let me know if you like it, I've always wanted to try a different flavor but am too comfortable with the yummy strawberry version to try something new.






Two Ingredient Fruit Dip (A 60 Second Recipe)


Ingredients:
8 oz strawberry cream cheese, at room temperature
7 oz marshmallow creme


Directions:
In a medium mixing bowl, using a fork, whisk together strawberry cream cheese and marshmallow cream until well combine. Serve with fruit for dipping (my favorites are strawberries, apple slices, blueberries or diced pineapple. This is also delicious with mini pretzels). Store in refrigerator up to three days, stir again before serving.

Caramel Cheesecake Apple Dip (3 Ingredient 3 Minute Recipe)


Cheesecake, caramel, apples - love all the above so why not put them all together? I wanted a simple dip for my apple one day and caramel apples are one of my favorite desserts, as is cheesecake, so I thought I may as well combine them all into one quick and ridiculously easy dip. To say this dip is good is speaking much too lightly. I'm totally in love with it! It makes a great last minute treat for a party because, really it can be made in just a few minutes (and if you have an apple slicer things are almost too easy to be true). Serve it with your favorite kind of apples (I think it would also be delicious with bananas and maybe a drizzling of chocolate mmm) and enjoy! 



Caramel Cheesecake Apple Dip
Yields enough for a small crowd (half a recipe would be enough for about 5 people)

Ingredients:
2 (8 oz) pkg cream cheese, chilled
1 cup caramel ice cream topping, chilled (I used Hershey's in the glass jar)
1 store bought graham cracker pie crust, crumbled

Directions:
Place cream cheese in a mixing bowl and using an electric mixer, whip cream cheese until smooth and fluffy for about 1 minute. Stir in caramel ice cream topping. Break graham cracker pie crust into pieces and place pieces in a ziploc bag, then seal bag and using a rolling pin crush graham cracker crust pieces until finely broken (there should no longer be chunks). Serve with apple slices. Dip apple slices into caramel cheesecake dip then into broken graham cracker crust. Store cheesecake dip in refrigerator up to one week.

Note: this dip is also delicious with a bit of cinnamon (about 1/4 tsp) and a few dashes of nutmeg mixed in.

Cookies and Cream Chex Mix


Don't worry people, yes Cookies and Cream Chex Mix was a limited edition (Dear General Mills, why would you make the best Chex Mix you've ever created a limited edition?) but the good news, I've figured out how to make them at home! And it's so easy and think they are even better (everything fresh home-made is better isn't it?). Also, I never thought I'd say it but these are even better than muddy buddies! I could eat the whole batch on my own. It takes 4 ingredients and they can honestly be made in under 5 minutes! I made these twice in the last two days (yeah they are that good), the second time around I did an equal ratio powdered sugar to Oreo and it was perfect. I ate these while eating cookies and cream ice cream and I think I may just like these more, that is SERIOUSLY saying something! How could one of my easiest recipes be one of my favorite =)? Sometimes the simplest things are the best. Warning: the following recipe is highly addictive, prepare at your own risk.


Cookies and Cream Chex Mix

Ingredients:
6 cups Corn Chex Cereal
1/2 cup very finely crushed Oreos (8 original Oreos)*
1/2 cup powdered sugar
1 (12 oz) bag Vanilla Candy Melts, such as Wilton

Directions:
Measure 6 cups Corn Chex Cereal into a large mixing bowl, set aside. Pour crushed Oreos and powdered sugar into a large ziploc bag, seal bag and shake to combine mixture, set aside. In a microwave safe bowl, melt Vanilla candy melts in 30 second intervals, stirring after each interval until melted and smooth. Pour melted candy melts over Corn Chex and toss mixture with a rubber spatula until evenly coated (scrapping down the sides of the bowl as stirring, don't waste any of that melted candy). Pour or scoop coated Corn Chex into ziploc bag containing crushed Oreo mixture. Seal bag and shake until the cereal is evenly coated. Store in an airtight container up to one week (but don't kid yourself they won't be around for a week =).

*when I say very finely crushed I mean very finely crushed, as in nearly powder. It's the larger clumps that will tend not to stick the the coated cereal.

Chewy Almond Poppy Seed Granola Bars (Lemon Poppy Seed variation too)


Time to ditch that almond poppy seed muffin your having every other morning for breakfast and reaching for this healthier, equally as delicious almond poppy seed granola bar instead! I'm ecstatic about this recipe that I came across from Rachel Ray. You can make a full batch of better tasting (and better for you) than store bought granola bars at home in about 5 minutes. I now have no excuse for buying the preservative filled granola bars at the store =), but after trying these I no longer have the desire to buy the store bought ones either. The possibilities with the recipe are endless! I can't wait for all the variations I'm going to try on these in the future. Here are some ideas ahead of time because I can't resist sharing =):

  • Chocolate chunks, freeze dried raspberries and chopped almonds
  • Dried apples, chopped, baking caramel pieces (I'd freeze them first then add to oat mixture or press into the top) and cinnamon/nutmeg
  • White chocolate chunks, dried cranberries and macadamia nuts
  • Lime zest/juice, coconut, coconut extract and chopped macadamia nuts
  • Toasted coconut, candied pineapple, chopped macadamia nuts and dried bananas 
  • Dried blueberries, chopped almonds, white chocolate chips and almond extract
  • White chocolate chips, orange zest and orange juice
  • Pretzels, peanut butter and chocolate chips
  • Peanuts, peanut butter and freeze dried raspberries (I love the flavors of a PBJ)

That's just a random list, I haven't tested them yet but they are combinations I can't wait to try in the future. If you try them let me know how you like them or let me know of any variations you come up with and love. Have a great day! 



Chewy Almond Poppy Seed Granola Bars
Yields 12 bars


Ingredients:

2 cups quick cooking oats
1 cup Rice Krispies Cereal
1/3 cup (heaping) dry roasted almonds, chopped
1 Tbsp poppy seeds
4 Tbsp butter
1/2 cup packed light-brown sugar
1/4 cup honey
1/8 tsp salt
3/4 tsp almond extract


Directions:
In a mixing bowl combine quick oats, Rice Krispies Cereal, chopped almonds and poppy seeds, set aside. Melt butter in a medium saucepan then stir in brown sugar, honey and salt. Bring mixture to a boil over medium high heat stirring constantly, then reduce temperature to medium low and simmer 2 minutes, stirring occasionally. Remove from heat, stir in almond extract. Pour sugar mixture over oat mixture and toss mixture until evenly coated. With buttered hands, firmly press mixture into a buttered 11 x 7 baking dish. Cover dish with plastic wrap and refrigerate 15 minutes. Cut granola into bars and store in an airtight container at room temperature.


Lemon Poppy Seed Variation


Ingredients:
2 1/4 cups quick cooking oats
1 cup Rice Krispies Cereal
1 Tbsp poppy seeds
4 Tbsp butter

1/4 cup honey
1 1/2 Tbsp fresh lemon juice
1 1/2 tsp lemon zest
1/8 tsp salt

In a mixing bowl combine quick oats, Rice Krispies Cereal and poppy seeds, set aside. Melt butter in a medium saucepan then stir in brown sugar, honey, salt, lemon juice and lemon zest. Bring mixture to a boil over medium high heat stirring constantly, then reduce temperature to medium low and simmer 2 minutes, stirring occasionally. Pour sugar mixture over oat mixture and toss mixture until evenly coated. With buttered hands, firmly press mixture into a buttered 11 x 7 baking dish. Cover dish with plastic wrap and refrigerate 15 minutes. Cut granola into bars and store in an airtight container at room temperature.


Note: I also tested these with lemon extract and didn't like them as much. The lemon juice did make a softer bar vs. extract so be sure to press them in the pan firmly.

Cookies and Cream Popcorn


What do you make when your in a crunch for time but want a wowing, incredible and highly addictive treat?  Cookies and cream popcorn mix.  I don't know if there's a  better way to celebrate Oreos 100th birthday than by making a batch of this perfect, intensely delicious popcorn.   I didn't have time for a time consuming post today, so this was the perfect thing for me to make.  I made it in under 10 minutes!  It is one of my new favorite treats!  I couldn't stop eating it and even though it was 10:00 in the morning =).  Be warned, once you start munching it is going to be hard to stop.  I'd recommend wrapping some up in treat bags, tying them with a ribbon and gifting them to friends, neighbors or coworkers.  Enjoy!

Cookies and Cream Popcorn

Ingredients:
1/2 cup unpopped popcorn kernels, or 2 bags tender white popcorn
1 (12 oz) bag Vanilla Candy Melts, such as Wilton
24 Oreo cookies, chopped into pebble size pieces (about 3 cups)

Directions:
Pop popcorn kernels in popcorn popper into a very large bowl, according to manufacturers directions (or alternately in microwave if using microwave popcorn bags).  Remove any unpopped kernels.  Toss chopped Oreos into popped popcorn.
In a microwave safe bowl, melt Vanilla Candy Melts in 30 second intervals,  stirring after each interval until melted and smooth.  Drizzle half of melted candy melts over popcorn mixture.  Toss several times with a rubber spatula then drizzle remaining melted candy melts over popcorn mixture and toss mixture gently for about 30 seconds - 1 minute until evenly coated.  Pour mixture into wax paper to allow mixture to cool and candy melts to set.  Store Cookies and Cream Popcorn in an airtight container.
